Erika’s lifelong passion for cooking began at an early age. While Erika was growing up her mother operated an in home cooking service in the country of Ecuador which inspires Erika to this day. Erika developed her culinary skills through many jobs working in the food industry and through professional training — she earned her degree in culinary arts from the Iberoamerican Institute in 2009. Erika has been cooking professionally for over 15 years and her background includes working at several outstanding restaurants in the Twin Cities including ethnic eateries focusing on gourmet Mexican, gourmet Italian, and Indian cuisine. Her cooking style is a blend of her favorite flavors from around the world. When the choice is practical, she prefers organic, sustainable and local foods that are in season. Even though her professional experience is very cosmopolitan, she understands the Minnesota palate and can appreciate a good hotdish or homemade lefsa! And as someone with three picky little eaters at home, she is experienced with creating delicious meals that every member of the family will enjoy.
